Ingredients

1 lb (450g) beef sirloin, thinly sliced

2 cups mushrooms, sliced (cremini or button)

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons all-purpose flour

1 cup beef broth

1 cup sour cream

2 tablespoons Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon paprika

Salt and pepper to taste

3 tablespoons olive oil

1 tablespoon butter

Fresh parsley, chopped (for garnish)

Cooked egg noodles or rice (for serving)

Instructions

Prep the Ingredients: Start by slicing the beef sirloin thinly against the grain. Slice the mushrooms and dice the onion. Mince the garlic and set everything aside.

Brown the Beef: In a large skillet or pan, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the sliced beef in batches to avoid overcrowding. Sear on each side for about 2-3 minutes until browned. Season with salt and pepper. Remove the beef from the skillet and set aside.

Cook the Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Add the diced onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and sliced mushrooms, and cook for an additional 5-6 minutes until the mushrooms are softened and browned.

Create the Sauce: Sprinkle the flour over the mushroom mixture and stir well to combine. Cook for about 1 minute to remove the raw flour taste. Gradually whisk in the beef broth, stirring continuously until the mixture thickens (about 3-4 minutes).

Add Creaminess: Reduce the heat to low and stir in the sour cream, Dijon mustard, Worcestershire sauce, and paprika. Mix well until smooth. Return the browned beef along with any collected juices to the pan. Stir to coat the beef with the sauce and let it simmer for about 5 minutes. Adjust seasoning with more salt and pepper, if needed.

Serve: Remove from heat and garnish with fresh parsley. Serve the savory beef and mushroom stroganoff over cooked egg noodles or rice for a comforting meal.
