1 lb (450g) beef sirloin, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced

1 cup broccoli florets

1 medium carrot, julienned

1 cup sugar snap peas

3 cloves garlic, minced

1-inch piece of ginger, grated

2 green onions, chopped

Sesame seeds, for garnish

Cooked rice or quinoa, for serving

Marinate the Beef: In a medium bowl, combine the sliced beef with soy sauce, oyster sauce, and cornstarch. Toss well to coat evenly. Let it marinate for at least 15 minutes while you prepare the vegetables.

    Prep the Vegetables: Wash and chop the bell pepper, broccoli, carrot, and sugar snap peas. Mince the garlic and grate the ginger, setting them aside.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. When the oil is hot, add the marinated beef in a single layer. Sear for about 2-3 minutes until browned, stirring occasionally. Remove the beef from the pan and set it aside.

        Stir-Fry the Vegetables: In the same skillet, add another tablespoon of vegetable oil if needed. Add the minced garlic and grated ginger, stirring quickly for about 30 seconds until fragrant. Then toss in the bell pepper, broccoli, carrot, and sugar snap peas. Stir-fry for about 4-5 minutes, until the veggies are tender-crisp.

          Combine Everything: Return the beef to the skillet, mixing it well with the vegetables. Stir-fry for an additional 2 minutes to heat everything through and combine the flavors.
