Ingredients

2 boneless, skinless chicken breasts

2 cups broccoli florets

8 ounces fettuccine pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets to the boiling pasta. Drain and set aside, reserving 1 cup of the pasta water.

Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning. Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and let it rest before slicing it into strips.

Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, then stir in the heavy cream. Bring the mixture to a gentle simmer and add the Parmesan cheese, stirring continuously until the cheese has melted and the sauce is smooth. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

Combine: Add the cooked fettuccine and broccoli to the skillet with the Alfredo sauce, tossing to coat all the noodles evenly. Fold in the sliced chicken until everything is well combined. Season with additional salt and pepper if needed.

Serve: Plate the creamy chicken Alfredo with broccoli, garnishing with freshly chopped parsley. Enjoy!
