Ingredients

500g chicken breast, thinly sliced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon cornstarch

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 medium carrot, julienned

1 cup broccoli florets

3 cloves garlic, finely minced

1-inch piece of ginger, freshly grated

2 tablespoons olive oil

1 tablespoon honey or maple syrup

Juice of 1 lime

Salt and pepper to taste

2 green onions, finely chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Instructions

Marinate the Chicken: In a medium-sized bowl, combine the thinly sliced chicken breast with soy sauce, sesame oil, cornstarch, and a pinch of salt and pepper. Stir well until the chicken is evenly coated. Cover and let it marinate for at least 15 minutes to enhance and deepen the flavors.

Prepare the Vegetables: While the chicken is marinating, thoroughly wash and chop all the vegetables. Slice the bell peppers, julienne the carrot, and separate the broccoli into florets. Set the prepared vegetables aside in a bowl.

Heat the Pan: In a large skillet or wok, heat the olive oil over medium-high heat until it shimmers and is hot enough for cooking.

Cook the Chicken: Add the marinated chicken to the pan in a single layer, making sure not to overcrowd it. Sear the chicken for about 5-7 minutes, flipping and stirring occasionally, until it is golden brown and fully cooked. Once done, remove the chicken from the pan and set it aside on a plate.

Sauté the Aromatics: In the same pan, add the minced garlic and grated ginger. Sauté for about 30 seconds, stirring frequently, until fragrant. Be careful to avoid burning them as it can lead to a bitter taste.

Add the Vegetables: Toss the prepared red and yellow bell peppers, carrots, and broccoli into the pan. Stir-fry for approximately 4-5 minutes until the vegetables become vibrant in color and tender-crisp.

Combine Everything: Return the cooked chicken to the pan with the vegetables. Drizzle in honey (or maple syrup) and freshly squeezed lime juice. Stir everything together for another 2 minutes to ensure everything is heated through and the flavors meld beautifully.

Garnish and Serve: Remove the stir-fry from the heat. Garnish with chopped green onions and sprinkle with sesame seeds for added texture and flavor. Serve hot over a bed of cooked rice or noodles for a complete meal.
