Ingredients

1 whole turkey (12-14 lbs)

1 cup unsalted butter, softened to room temperature

10 cloves of garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 tablespoons fresh sage, finely chopped

1 tablespoon onion powder

1 tablespoon paprika

Salt and freshly ground black pepper, to taste

4 cups low-sodium chicken broth

1 large onion, quartered

2 carrots, peeled and chopped

2 celery stalks, chopped

Fresh herbs for garnish (such as parsley or extra thyme)

Instructions

Prepare the Turkey: Begin by preheating your oven to 350°F (175°C). Carefully remove the giblets and neck from the turkey cavity. Pat the outside and inside of the turkey thoroughly dry with paper towels to ensure crispy skin.

Make the Herb Butter: In a medium mixing bowl, blend the softened butter with minced garlic, chopped rosemary, chopped thyme, chopped sage, onion powder, paprika, along with a generous pinch of salt and freshly ground black pepper. Stir it all together until the mixture is homogenous and fragrant.

Season the Turkey: Gently slide your fingers under the skin of the turkey breast and thighs to create pockets. Use a spoon or your fingers to spread a portion of the herb butter mixture directly onto the meat beneath the skin. Then, coat the exterior of the turkey evenly with the remaining herb butter, ensuring every surface is covered.

Prepare the Roasting Pan: In a large roasting pan, layer the quartered onion, chopped carrots, and celery at the bottom. Pour the low-sodium chicken broth over the veggies. This combination will infuse the turkey with delicious moisture and flavor while roasting.

Roast the Turkey: Place the turkey on a roasting rack, breast side up, in the prepared pan. Roast in the preheated oven for about 2.5 to 3 hours. Use a meat thermometer to check that the internal temperature of the thickest part of the thigh registers 165°F (74°C). Every 30 minutes, baste the turkey with the flavorful drippings collected in the pan to enhance moisture and flavor.

Rest the Turkey: Once the turkey reaches the desired temperature, carefully remove it from the oven. Tent it loosely with aluminum foil and allow it to rest for at least 30 minutes. This resting period helps the juices redistribute throughout the meat for maximum flavor and tenderness.

Serve: After resting, carve the turkey and arrange the slices on a serving platter. To elevate the presentation, garnish with sprigs of fresh herbs like parsley or thyme. Pair with your favorite side dishes for a delightful feast!
