4 medium sweet potatoes

1 lb ground turkey or beef

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or fresh)

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 cup diced tomatoes (fresh or canned)

1 ripe avocado, diced

1 cup shredded cheddar cheese

1/2 cup sour cream or Greek yogurt

Fresh cilantro, chopped (for garnish)

Olive oil

Salt and pepper to taste

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash and scrub the sweet potatoes thoroughly. Pierce each potato several times with a fork to allow steam to escape. Place them on a baking sheet lined with parchment paper and drizzle with a little olive oil, salt, and pepper. Bake in the preheated oven for 45-50 minutes, or until tender.

      Cook the Filling: While the sweet potatoes are baking, heat a large skillet over medium heat and add a tablespoon of olive oil. Once hot, add the diced onion and sauté for about 3-4 minutes until it becomes translucent.

        Add Garlic and Meat: Add the minced garlic and ground turkey (or beef) to the skillet. Cook until the meat is browned and fully cooked, breaking it apart with a spatula as it cooks. Season with salt and pepper to taste.
