2 tablespoons olive oil (divided)

1/4 cup salsa (for dipping, optional)

Prepare the Veggies: In a mixing bowl, combine the chopped bell peppers, zucchini, corn, spinach (if using), and green onions. Sprinkle in the garlic powder, cumin, and season with salt and pepper to taste. Mix the ingredients thoroughly, ensuring that all the vegetables are evenly coated with the seasonings.

    Heat the Skillet: Place a non-stick skillet over medium heat. Drizzle in 1 tablespoon of olive oil, making sure to coat the bottom of the skillet evenly.

      Assemble the Quesadillas: Lay one tortilla flat on a clean plate. On one half of the tortilla, layer a generous amount of shredded cheddar cheese. Next, spread a portion of the vegetable mixture over the cheese, followed by a sprinkle of shredded mozzarella cheese. Finally, fold the tortilla in half, creating a half-moon shape.
