Ingredients

4 large flour tortillas

1 cup cream cheese, softened to room temperature

1/4 cup honey or maple syrup (your choice)

1 teaspoon pure vanilla extract

1 cup mixed fresh fruits, diced (e.g., strawberries, blueberries, kiwi, banana)

1/4 cup mini marshmallows (optional for added sweetness)

1/4 teaspoon ground cinnamon (for topping)

Fresh mint leaves (for garnish)

Instructions

In a medium-sized mixing bowl, combine the softened cream cheese, honey (or maple syrup), and vanilla extract. Using a whisk or electric mixer, whip the ingredients together until the mixture is smooth and creamy, creating a luscious spread.

Preheat a large skillet over medium heat, ensuring it's hot enough to crisp the tortillas without burning them.

Take the tortillas and spread a generous layer of the cream cheese mixture on one side of each tortilla, covering it evenly to provide a creamy base for the fruit.

On one-half of each tortilla, layer a vibrant mix of the diced fresh fruits, creating a colorful and delicious filling. If desired, sprinkle mini marshmallows over the fruit for a touch of whimsy and extra sweetness.

Carefully fold each tortilla in half to create a half-moon shape, pressing down gently along the edges to secure the filling inside.

Place the filled quesadillas carefully onto the preheated skillet. Cook for about 3-4 minutes on each side, or until the tortillas become golden brown and crispy, forming a delightful outer layer.

Once the quesadillas are cooked, take them off the skillet and sprinkle a dash of ground cinnamon on top for an aromatic finish.

Allow the quesadillas to cool for a couple of minutes before slicing them into wedges, making them easy to share and enjoy.

Serve the quesadillas warm, garnished with fresh mint leaves for a pop of color and a hint of refreshing flavor.
