2 cups diced pumpkin (peeled and seeds removed)

2 medium apples, cored and diced (suggestion: Honeycrisp or Granny Smith)

1 medium onion, chopped

2 cloves garlic, minced

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp cayenne pepper (optional, for a little kick)

3 tbsp olive oil

Salt and pepper, to taste

1/4 cup chopped fresh parsley (for garnish)

4 large eggs (optional, for topping)

Instructions
 

Heat the olive oil in a large skillet over medium heat. Once shimmering, add the chopped onions and sauté for about 3-4 minutes, or until they become translucent.

    Add the minced garlic to the skillet and cook for an additional 1-2 minutes, stirring frequently to prevent burning.

      Stir in the diced pumpkin, ground cinnamon, nutmeg, ginger, cayenne (if using), and a pinch of salt and pepper. Cook for about 10 minutes, stirring occasionally, until the pumpkin begins to soften.

        Add the diced apples to the skillet and cook for another 5-7 minutes, until the apples are tender but still retain some shape. Adjust seasoning with more salt and pepper, if desired.

          If you want to add eggs, create four small indentations in the hash with a spoon. Crack an egg into each indentation, cover the skillet with a lid, and cook until the eggs are set to your liking, around 5-8 minutes.

            Once everything is cooked and combined, remove from heat, garnish with fresh parsley, and serve warm.
