1 lb ground beef (or use ground turkey for a lighter alternative)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (14.5 oz) diced tomatoes with green chilies

1 can (8 oz) tomato sauce

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or green), chopped

1-2 jalapeños, diced (adjust to your spice preference)

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

1/2 tsp salt (adjust to taste)

1/2 tsp black pepper

1 cup beef or vegetable broth

Optional toppings: shredded cheese, sour cream, chopped green onions, fresh cilantro, and tortilla chips for crunch

Instructions
 

Brown the Meat: In a large skillet over medium heat, add the ground beef (or turkey). Cook until browned and fully cooked through, breaking it up with a spatula as it cooks. Once browned, drain any excess fat and transfer the meat into your slow cooker.

    Combine Ingredients: In the slow cooker, add the rinsed black beans, kidney beans, diced tomatoes (with their juices), tomato sauce, chopped onion, minced garlic, bell pepper, and diced jalapeños. Sprinkle in the chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper.

      Pour in Broth: Gently pour the beef or vegetable broth over the mixture in the slow cooker. Stir everything together until all ingredients are well combined and coated in the spices.
