Slow Cooker Pulled Pork Sandwiches

3-4 lbs pork shoulder (boneless)

2 tablespoons brown sugar

1 tablespoon smoked paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1 teaspoon black pepper

1 cup barbecue sauce (your favorite brand)

1/2 cup apple cider vinegar

1/2 cup chicken broth

8 burger buns

Coleslaw (for topping, optional)

Instructions
 

Prepare the Pork: Rinse and pat dry the pork shoulder. Trim any excess fat if needed, as it can render a lot of grease during cooking.

    Make the Rub: In a small bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well to create a spice rub.

      Season the Pork: Rub the spice mixture evenly all over the pork shoulder. Make sure to get into any nooks and crannies.

        Butterfly the Pork: Place the seasoned pork shoulder into the slow cooker.

          Add Liquids: In a separate bowl, mix together the barbecue sauce, apple cider vinegar, and chicken broth. Pour this mixture over the pork in the slow cooker, ensuring it's coated well.

            Slow Cook: Cover and cook on low for 8-10 hours or on high for 4-6 hours. The pork should be tender and easily shredded with a fork.

              Shred the Meat: Once cooked, remove the pork from the slow cooker and place it on a cutting board. Use two forks to shred the meat apart.

                Return to Sauce: Place the shredded pork back into the slow cooker and stir it into the remaining juices, allowing it to soak up all the flavorful goodness.

                  Prepare the Sandwiches: Lightly toast the burger buns if desired. Pile generous portions of the pulled pork on each bun and top with coleslaw, if using.

                    Serve and Enjoy: Plate the sandwiches while still warm, and serve with extra barbecue sauce on the side.
