Slow Cooker Turkey Taco Chili

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (14 oz) diced tomatoes with juices, undrained

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 cup corn (frozen or canned)

2 tbsp chili powder

1 tbsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

½ tsp salt (or to taste)

½ tsp black pepper

1 cup chicken broth (low-sodium preferred)

Optional toppings:

Chopped fresh cilantro

Slices of avocado

Shredded cheese (cheddar or Mexican blend)

Sour cream

Lime wedges

Instructions
 

In a large skillet over medium heat, add the ground turkey. Cook until browned, using a spatula to break it into smaller pieces as it cooks, which should take about 5-7 minutes. Drain any excess fat from the skillet.

    Transfer the browned turkey to a slow cooker. Layer on top the diced onion, minced garlic, red bell pepper, and green bell pepper.

      Pour in the undrained can of diced tomatoes, along with the rinsed and drained black beans, kidney beans, and corn. Use a spoon to thoroughly stir and combine all ingredients.

        Evenly sprinkle the chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper over the mixture. Carefully add the chicken broth, then stir again to ensure an even distribution of spices and liquids.

          Cover the slow cooker with the lid. Set it to cook on low for 6-8 hours or on high for 3-4 hours, allowing the flavors to meld together beautifully.

            Once the cooking time is complete, taste the chili and adjust the seasoning as desired. Serve warm, topped with your choice of chopped cilantro, avocado slices, shredded cheese, sour cream, and a wedge of lime for an extra burst of flavor.
