Spinach Artichoke Tortilla Wraps

1 cup fresh spinach, finely chopped

1 cup jarred or canned artichoke hearts, drained and roughly chopped

1/2 cup cream cheese, softened to room temperature

1/2 cup Greek yogurt or sour cream, your choice

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes (optional, for a bit of heat)

4 large flour tortillas (10-inch size recommended)

1 cup shredded mozzarella cheese

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

In a medium mixing bowl, thoroughly combine the finely chopped spinach and chopped artichoke hearts until evenly blended.

    Add the softened cream cheese, Greek yogurt or sour cream, grated Parmesan cheese, garlic powder, black pepper, and optional red pepper flakes to the spinach-artichoke mix. Using a spatula, mix everything until the mixture is smooth and well incorporated.

      Lay out each flour tortilla on a clean, flat surface. Spoon a generous portion of the spinach-artichoke mixture onto the center of each tortilla, spreading it evenly while leaving about a 1-inch border around the edges for easy rolling.

        Evenly distribute the shredded mozzarella cheese over the top of the mixture on each tortilla for that melty goodness.

          Starting from one end, tightly roll each tortilla, making sure to tuck in the sides as you go to prevent any filling from spilling out.
