2 cups fresh strawberries, hulled and finely chopped

1 cup fresh basil leaves, tightly packed

1 cup freshly squeezed lemon juice (approximately 4-6 medium lemons)

1/2 cup granulated sugar (adjust to your preferred sweetness)

2 cups water

Zest of 1 lemon

Create the Simple Syrup: In a medium saucepan, combine the 2 cups of water and the 1/2 cup of granulated sugar. Heat over medium heat, stirring continuously until the sugar has completely dissolved. Once dissolved, remove the saucepan from the heat and allow the syrup to cool to room temperature.

    Blend the Ingredients: In a high-powered blender, combine the chopped strawberries, fresh basil leaves, freshly squeezed lemon juice, lemon zest, and the cooled simple syrup. Blend the mixture on high speed until you achieve a smooth consistency. After blending, taste the mixture and, if desired, adjust the sweetness by adding additional sugar. Blend again briefly to incorporate any added sugar.

      Strain the Mixture: Pour the blended mixture through a fine-mesh sieve into a large bowl or pitcher. Use a spatula to press the mixture against the sieve to extract the smooth liquid, leaving behind any pulp or leftover basil bits. Discard the solids.

        Fill the Popsicle Molds: Carefully pour the strained strawberry basil lemonade liquid into your popsicle molds, filling them about 3/4 full to allow for expansion during freezing.

          Insert Sticks and Freeze: Place popsicle sticks into the molds, ensuring they stand upright. Transfer the molds into the freezer and let them freeze for at least 4 to 6 hours, or until the popsicles are completely solid throughout.
