Ingredients

4 boneless, skinless chicken breasts

1 cup fresh strawberries, hulled and sliced

1/3 cup balsamic vinegar

1/4 cup honey

2 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil or mint, for garnish (optional)

Instructions

Prepare the Glaze: In a medium saucepan, combine the sliced strawberries, balsamic vinegar, honey, soy sauce, minced garlic, and grated ginger. Bring this mixture to a gentle simmer over medium heat, stirring occasionally. Allow it to cook for about 10-15 minutes, or until the strawberries become tender and the sauce thickens slightly. Once ready, remove the pan from heat and set aside.

Season the Chicken: While the glaze is cooking, generously season both sides of the chicken breasts with salt and pepper, ensuring an even coating for enhanced flavor.

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. When the oil is shimmering, carefully add the seasoned chicken breasts to the skillet. Sear the chicken for 6-7 minutes on each side, or until they develop a nice golden-brown crust and are fully cooked through (the internal temperature should reach 165°F or 75°C). Once cooked, transfer the chicken to a plate.

Add the Glaze: Pour the prepared strawberry glaze into the hot skillet. Stir for a moment to combine with any drippings left from the chicken. Place the chicken breasts back into the skillet, ensuring they are coated in the glaze. Allow it to simmer for an additional 2-3 minutes, turning the chicken occasionally, to soak up all the delicious flavors.

Serve: Carefully remove the chicken from the skillet and place on a serving platter. Drizzle the remaining strawberry glaze over the top for a beautiful finish. If desired, garnish with freshly chopped basil or mint for a refreshing touch.

Enjoy: Serve the strawberry glazed chicken hot alongside your favorite sides, such as fluffy rice, nutty quinoa, or a vibrant fresh salad, for a balanced meal.
