Strawberry Glazed Turkey

1 whole turkey (12-14 pounds), fully thawed

2 cups fresh strawberries, hulled and roughly chopped

1 cup strawberry jam

1/4 cup balsamic vinegar

1/4 cup honey

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 teaspoon fresh rosemary, chopped

2 tablespoons olive oil

Fresh strawberries and herbs for garnish (optional)

Instructions
 

Prepare the Turkey:

    - Preheat your oven to 325°F (165°C).

      - Rinse the turkey thoroughly under cold water, then pat dry with paper towels. Ensure the cavity is clear by removing any giblets and trimming away excess fat from the turkey.

        Make the Strawberry Glaze:

          - In a medium saucepan set over medium heat, combine the chopped strawberries, strawberry jam, balsamic vinegar, honey, Dijon mustard, garlic powder, onion powder, salt, black pepper, thyme, and rosemary.

            - Stir the mixture well and bring it to a gentle boil. Once boiling, reduce the heat to low and let simmer for about 10-15 minutes, stirring occasionally, until the glaze thickens slightly. Once done, remove from heat and allow it to cool for a few minutes.

              Season the Turkey:

                - Drizzle the turkey with olive oil, ensuring every surface is evenly coated for a golden finish. Generously season the inside of the cavity and the exterior with salt and black pepper.

                  Apply the Glaze:

                    - Using a brush or a spoon, apply half of the cooled strawberry glaze mixture over the turkey, making sure to cover all accessible surfaces comprehensively. Set aside the remaining glaze for later basting and serving.

                      Roast the Turkey:

                        - Position the turkey breast-side up in a roasting pan. Loosely tent the turkey with aluminum foil to prevent the skin from browning too quickly.

                          - Place the turkey in the preheated oven. Roast for approximately 13-15 minutes per pound, basting with the remaining glaze every 30 minutes. In the last 30-45 minutes of cooking, remove the foil to allow the skin to crisp and turn a beautiful golden brown. Ensure the internal temperature of the thickest part of the breast and thigh reaches 165°F (75°C).

                            Rest and Serve:

                              - Once the turkey is perfectly roasted, take it out of the oven and let it rest for at least 20 minutes before carving. Resting helps the juices redistribute throughout the meat, keeping it wonderfully moist.

                                - If desired, garnish the turkey with fresh strawberries and herbs for an appealing presentation. Serve with the reserved strawberry glaze on the side for drizzling over individual servings.
