Ingredients

2 medium ripe bananas (around 200g when mashed; choose bananas that are heavily speckled for maximum sweetness)

3 large eggs (room temperature)

½ cup almond flour

½ cup coconut flour

½ cup erythritol sweetener (or your preferred sugar substitute)

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp pure vanilla extract

½ cup unsweetened Greek yogurt (or sour cream for moisture)

1 tsp ground cinnamon (optional, for warmth)

¼ cup chopped nuts (such as walnuts or pecans) or sugar-free chocolate chips (optional, for added texture)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a standard loaf pan by greasing it with oil or butter, or line it with parchment paper for easy removal later.

Mash the Bananas: In a medium mixing bowl, thoroughly mash the ripe bananas with a fork or potato masher until they are smooth and creamy, with minimal lumps.

Mix Wet Ingredients: To the mashed bananas, add the eggs, erythritol, vanilla extract, and Greek yogurt. Using a whisk, mix until all ingredients are well incorporated and the mixture appears creamy and homogeneous.

Combine Dry Ingredients: In a separate bowl, combine the almond flour, coconut flour, baking powder, baking soda, salt, and ground cinnamon (if using). Whisk these dry ingredients together until they are evenly distributed and there are no lumps.

Combine Wet and Dry Mixtures: Gradually fold the dry mixture into the wet mixture using a spatula. Stir gently until just mixed; be careful not to overmix, as this can lead to a denser texture.

Add Optional Ingredients: If you like, gently fold in your choice of chopped nuts or sugar-free chocolate chips, ensuring they are evenly distributed throughout the batter.

Pour into Loaf Pan: Carefully pour the prepared batter into the greased loaf pan, using a spatula to smooth the top for an even bake.

Bake: Place the loaf pan in the center of the preheated oven and bake for 45-55 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean or with a few crumbs attached.

Cool: Once baked, remove the banana bread from the oven and let it cool in the pan for about 10 minutes. Afterward, transfer it to a wire rack to cool completely, which will help maintain its texture.

Slice and Serve: Once fully cooled, slice your scrumptious sugar-free keto banana bread into 12 slices. Enjoy it on its own, or enhance it with a spread of butter or sugar-free nut butter for extra richness.

Prep Time: 15 minutes | Total Time: 1 hour 10 minutes | Servings: 12 slices

                        - Presentation Tips: For an appealing presentation, arrange slices on a rustic wooden platter and garnish with a sprinkle of cinnamon or a few banana slices on the side. Ideal for brunch or a cozy tea time!
