1 lb ground chicken (alternatively, you can use shredded poached chicken)

1 cup cooked rice (white or brown depending on preference)

½ cup sweet chili sauce (plus extra for drizzling on top)

1 cup corn (frozen or canned, well-drained)

1 cup shredded cheese (mozzarella or cheddar works perfectly)

2 green onions, thinly sliced

2 cloves garlic, minced

1 teaspoon fresh ginger, grated (optional for extra flavor)

Salt and pepper, to taste

Olive oil, for drizzling

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Bell Peppers: Carefully slice the tops off the bell peppers and remove all seeds and membranes. Lightly coat both the inside and outside of the peppers with olive oil, then set them upright in a baking dish.

      Cook the Chicken: Heat a tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and grated ginger (if using) and sauté for 1-2 minutes until fragrant. Next, add the ground chicken to the skillet, seasoning it with salt and pepper. Cook for approximately 6-8 minutes, stirring frequently, until the chicken is browned and cooked through.

        Mix the Filling: In a large mixing bowl, combine the cooked chicken, rice, corn, half of the sweet chili sauce, half of the shredded cheese, and sliced green onions. Stir everything together until fully mixed, tasting for seasoning; add more salt and pepper if necessary.

          Stuff the Peppers: Using a spoon, generously fill each prepared bell pepper with the chicken mixture, packing it down gently to ensure they are well-filled. Top each bell pepper with the remaining shredded cheese.
