1/4 cup finely chopped red bell pepper

2 large eggs

1/2 cup buttermilk (or regular milk)

Prepare the Vegetable Mixture: In a large mixing bowl, gently fold together the fresh or thawed corn kernels, chopped green onions, diced red bell pepper, and chopped herbs if using. Ensure all ingredients are well distributed and set aside.

    Make the Batter: In a separate mixing bowl, whisk together the all-purpose flour, cornmeal, baking powder, salt, black pepper, and paprika until evenly mixed. Create a well in the center of the dry ingredients and crack in the eggs. Pour in the buttermilk and whisk until the mixture is just combined. Be careful not to overmix; the batter should be thick but still slightly lumpy.

      Combine Mixtures: Carefully fold the prepared corn and vegetable mixture into the batter using a rubber spatula or wooden spoon. Gently mix until all ingredients are well coated in the batter.
