Ingredients

For the Turkey Tacos:

1 lb ground turkey

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

8 small corn tortillas

Fresh cilantro, for garnish (optional)

For the Blueberry Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup blueberries (fresh or frozen)

1/4 cup carrots, shredded

1/4 cup red onion, thinly sliced

3 tablespoons apple cider vinegar

2 tablespoons honey (or maple syrup for a vegan option)

1 tablespoon Dijon mustard

Salt and pepper to taste

Instructions

Prepare the Blueberry Slaw:

    - In a large mixing bowl, add the finely shredded green cabbage, red cabbage, blueberries, shredded carrots, and thinly sliced red onion.

      - In a separate small bowl, whisk together the apple cider vinegar, honey (or maple syrup), Dijon mustard, along with salt and pepper until the mixture is smooth and well-combined.

        - Drizzle the dressing over the cabbage mixture and toss gently until all ingredients are evenly coated. Set the slaw aside to marinate for at least 15 minutes while you prepare the turkey.

          Cook the Turkey:

            - In a large skillet, heat the olive oil over medium heat until shimmering.

              - Add the ground turkey to the skillet. Using a spatula, break it apart and cook for approximately 5-7 minutes, or until it is browned and no longer pink.

                - Once browned, sprinkle in the chili powder, cumin, garlic powder, onion powder, and season with salt and pepper. Stir well to combine all the spices, and continue cooking for an additional 3-4 minutes until the turkey is fully cooked through and the flavors are well developed.

                  Warm the Tortillas:

                    - In a separate skillet or on a warm griddle, place the corn tortillas over medium-low heat. Warm each tortilla for about 30 seconds on each side until they become warm and pliable. Keep them covered to retain warmth as you work.

                      Assemble the Tacos:

                        - Take a warm corn tortilla and add a generous spoonful of the seasoned turkey mixture onto the center.

                          - Top it off with a hearty scoop of the blueberry slaw, letting it spill slightly over for a colorful presentation.

                            Garnish and Serve:

                              - Optionally, sprinkle fresh cilantro on top of each taco for an extra burst of flavor and color. Serve the tacos immediately for the best taste experience, accompanied by lime wedges if desired.
