Ingredients

1.5 lbs ground turkey

2 cups broccoli florets

1 cup cherry tomatoes, halved

1 medium red bell pepper, diced

1 medium zucchini, sliced into half-moons

1 medium yellow onion, sliced

3 cloves garlic, minced

2 teaspoons Italian seasoning

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

3 tablespoons olive oil

2 tablespoons balsamic vinegar

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Set your oven to preheat at 425°F (220°C). Line a large baking sheet with parchment paper for easier cleanup and even cooking of the dish.

Prepare the Vegetables: In a large mixing bowl, combine the broccoli florets, halved cherry tomatoes, diced red bell pepper, sliced zucchini, and onion. Drizzle with 2 tablespoons of olive oil and balsamic vinegar. Season with salt, black pepper, and Italian seasoning. Toss well until all vegetables are evenly coated with the mixture.

Form the Turkey Meatballs: In a separate bowl, mix the ground turkey with the minced garlic, paprika, and a small pinch of salt and pepper. Use your hands to combine the ingredients thoroughly, then shape the mixture into small meatballs, about the size of golf balls (aim for 12-15 meatballs total).

Assemble on the Sheet Pan: On one side of the prepared baking sheet, spread the seasoned vegetables out in an even layer. On the other side, arrange the turkey meatballs, ensuring they are spaced apart to allow for even cooking and browning.

Drizzle and Roast: Drizzle the remaining 1 tablespoon of olive oil over both the turkey meatballs and the vegetables. Place the sheet pan in the preheated oven and roast everything for 20-25 minutes, or until the meatballs are cooked through (an internal temperature of 165°F (74°C)) and the vegetables are tender with slightly caramelized edges.

Garnish and Serve: Once roasted to perfection, remove the pan from the oven and sprinkle the dish with freshly chopped parsley for a vibrant finish. Serve hot, either as a standalone dish or alongside cooked quinoa or brown rice for a satisfying and nutritious meal.

              Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 4

                - Presentation Tips: For an appealing display, serve the turkey and veggies on a large platter, drizzled with a little extra balsamic vinegar, and garnish with more fresh parsley.
