Ingredients

4 boneless, skinless chicken breasts

2 cups fresh watermelon, diced

1/4 cup honey

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

Fresh mint leaves, for garnish

Sesame seeds, for garnish

Instructions

Prepare the Watermelon Glaze: In a medium saucepan over medium heat, combine the diced watermelon, honey, soy sauce, rice vinegar, minced garlic, and grated ginger. Stir the mixture and let it simmer for about 10-15 minutes, or until the watermelon breaks down and the mixture thickens slightly. Stir occasionally to prevent it from sticking to the bottom of the pan. Once thickened, remove from heat and let it cool slightly.

Marinate the Chicken: Season the chicken breasts with salt and pepper to taste. Place the chicken in a bowl and pour half of the prepared watermelon glaze over it, ensuring each piece is well coated. Cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for a more intense flavor.

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Remove the chicken from the marinade and discard the leftover marinade. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until the chicken is golden brown and cooked through (the internal temperature should reach 165°F / 75°C).

Glaze the Chicken: In the final minute of cooking, brush the remaining watermelon glaze over the chicken to create a beautifully caramelized finish. Allow the glaze to heat through just until it starts to bubble.

Serve: Once cooked, transfer the chicken to a cutting board and let it rest for a couple of minutes. Slice the chicken into strips and drizzle with any leftover glaze. To elevate the dish, garnish with fresh mint leaves and a light sprinkle of sesame seeds.

Enjoy: For a complete summer meal, serve alongside a vibrant mix of grilled vegetables or a refreshing salad.
