Watermelon Mint Sorbet

1/4 cup fresh mint leaves, packed

1/2 cup granulated sugar (adjust according to sweetness preference)

1 tablespoon freshly squeezed lime juice

Pinch of salt

Prepare the Watermelon: Begin by selecting a ripe seedless watermelon. Cut it into small cubes and lay them out in a single layer on a baking sheet. Place the baking sheet in the freezer and allow the watermelon cubes to freeze for at least 4 hours, or until they are completely solid.

    Make Mint Infusion: In a small saucepan, combine the water, granulated sugar, and a pinch of salt. Heat the mixture over medium heat, stirring occasionally, until the sugar is fully dissolved. Once dissolved, remove the saucepan from the heat and add the packed fresh mint leaves. Let the mint steep in the syrup for about 30 minutes. After steeping, strain the mixture through a fine mesh sieve to remove the mint leaves, retaining the fragrant mint syrup.

      Blend the Ingredients: In a high-speed blender or a food processor, combine the frozen watermelon cubes with the mint syrup you prepared in the previous step and the freshly squeezed lime juice. Blend the mixture on high speed until it reaches a smooth consistency, stopping as needed to scrape down the sides of the container. Sample the sorbet and adjust the sweetness if necessary by adding more sugar.

        Chill the Sorbet Mixture: Once blended to your preferred smoothness, transfer the watermelon mint mixture into an airtight container. Place the container in the freezer and allow it to chill for 1-2 hours, or until it firms up enough to be easily scooped.

          Serve the Sorbet: When you’re ready to serve the sorbet, take it out of the freezer and let it sit at room temperature for about 5-10 minutes to soften slightly, which makes scooping easier.             Storing Leftovers: If you have any leftover sorbet, store it in the freezer in the same airtight container. Before serving any remaining sorbet, allow it to sit out for a few minutes at room temperature to achieve the best texture for scooping.
