2 large zucchinis

1 cup canned black beans, rinsed and drained

¼ cup sliced black olives

2 green onions, finely chopped

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure a crispy texture.

    Prepare the Zucchini: Cut the zucchinis into ¼-inch thick rounds. If the zucchinis are particularly watery, sprinkle them lightly with salt and let them rest for 10 minutes to draw out excess moisture. After resting, use paper towels to pat them dry.

      Bake the Zucchini Rounds: Line a baking sheet with parchment paper for easy cleanup. Arrange the zucchini rounds in a single layer on the sheet. Bake them in the preheated oven for about 15-20 minutes, or until they are slightly crispy, flipping the slices halfway through to ensure even cooking.

        Season the Black Beans: In a medium-sized bowl, combine the rinsed black beans with smoked paprika, garlic powder, ground cumin, and a pinch of salt and pepper. Stir well to ensure the beans are evenly coated with the seasonings.
