Ingredients

4 medium zucchinis

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls (bocconcini), halved

1/2 cup fresh basil leaves, roughly torn

2 tablespoons extra virgin olive oil

1 tablespoon balsamic glaze

Salt and freshly cracked pepper to taste

1/4 teaspoon garlic powder (optional)

1/4 teaspoon red pepper flakes (optional, for heat)

Instructions

Prepare Zucchini Noodles:

    - Using a spiralizer or a julienne peeler, create noodles from the zucchinis, known as zoodles. If you do not have these tools, simply slice the zucchinis into thin matchstick strips with a sharp knife.

      Sauté the Zoodles:

        - In a spacious skillet, heat 1 tablespoon of extra virgin olive oil over medium heat. Once hot, add the zucchini noodles and sauté for about 2-3 minutes. Cook just until they begin to soften while ensuring they retain a slight crunch. Season with salt, pepper, and garlic powder (if using). Remove from heat and set the noodles aside.

          Mix the Caprese Salad:

            - In a large mixing bowl, combine the halved cherry tomatoes, halved mozzarella balls, and torn basil leaves. Drizzle the mixture with the remaining tablespoon of olive oil and the balsamic glaze. Toss gently to combine the ingredients, ensuring they are well coated. Adjust seasoning with salt, pepper, and add red pepper flakes for a hint of heat if desired.

              Assemble the Bowls:

                - Evenly divide the sautéed zucchini noodles among individual serving bowls. Top each bowl generously with the Caprese salad mixture. Feel free to finish with an extra drizzle of balsamic glaze for added flavor and presentation.

                  Garnish & Serve:

                    - For an enhanced touch, garnish each bowl with additional basil leaves or a light sprinkle of Italian seasoning. Serve immediately to enjoy the warm, savory zoodles alongside the fresh Caprese salad.
