1 medium zucchini, finely grated (about 1 cup)

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp Italian seasoning

1 tsp salt

½ tsp black pepper

1 large egg, lightly beaten

12 slider buns

1 cup marinara sauce

1 cup shredded mozzarella cheese

Fresh basil leaves (for garnish)

Prep the Zucchini: Begin by grating the zucchini using a box grater or food processor. To avoid soggy sliders, place the grated zucchini into a clean kitchen towel and twist the towel to squeeze out as much moisture as possible. Set the drained zucchini aside.

    Combine Ingredients: In a large mixing bowl, combine the ground chicken, the squeezed zucchini, grated Parmesan cheese, breadcrumbs, minced garlic, Italian seasoning, salt, black pepper, and the lightly beaten egg. Use your hands or a spatula to mix everything until just combined, being careful not to overmix to keep the patties tender.

      Form the Patties: Divide the mixture into 12 equal portions. Using your hands, shape each portion into a slider-sized patty, about 2-3 inches in diameter. Place the formed patties on a plate.

        Cook the Sliders: Heat a large skillet over medium heat and drizzle in a little olive oil to coat the bottom. Add the patties to the skillet, ensuring not to overcrowd the pan. Cook the patties for about 4-5 minutes on each side or until they are golden brown and cooked through, with an internal temperature of 165°F when checked with a meat thermometer.

          Add Cheese and Marinara: When the sliders are flipped, spoon approximately one tablespoon of marinara sauce onto each patty. Generously sprinkle shredded mozzarella cheese over the sauce. Cover the skillet with a lid and allow the cheese to melt for about 2-3 minutes.

            Assemble the Sliders: Lightly toast the slider buns either in the same skillet or on a grill for toasty flavor and crisp texture. Once toasted, place a cheesy chicken patty on the bottom half of each bun. Add additional marinara sauce if desired, and garnish with fresh basil leaves. Place the top half of each bun on to complete the sliders.
